Hope you got what you wanted for Christmas!!

I got an a really great unexpected gift, a brand new laptop!!!! Love it, I am learning to use it, which is going to take a lot of effort since I can technology stupid. Hopefully, now I can do more photos on this blog. I hope to post a current photo of my kitchen so I can get input on the renovation.

The other thing I got that I could have done without, is a big fat sprained ankle. I was headed to my Mom's house on Saturday, motivated to really get some work done cleaning out, and fell off my front porch step and twisted my left ankle really bad. At first I thought it was broken, but since I can move it, it's probably just a really bad sprain. However, Saturday and Sunday were useless days for me, couldn't walk. How stupid can I get???????????

Sometimes it doesn't pay to get out of bed.

Good news!!!!

My mom's house is under contract!!! Thanks to the horrible real estate market, we got less than we wanted but figured the market would only get worse before it got better, so we took what we could get. Just an inspection and appraisal stands between me and this big monkey being off my back.

Next up? Well, if the house sells, I am going to do a major kitchen renovation on a small budget. For $10,000 I'm hoping to remove the wall between the kitchen and family room, get new appliances, including a gas cook top and double ovens, new flooring and a island. As you can tell, this is going to be a challenge. I will be soliciting help from you guys, so don't be shy. I'll post the before photos soon, and you'll see for yourselves that it's desperately past due.

Gold, Incense, and Myrrh

"On coming to the house, they saw the child with his mother Mary, and they bowed down and worshiped him. Then they opened their treasures and presented him with gifts of gold and of incense and of myrrh."
Matthew 2:11 (NIV)

Whether you grew up in church or not, you've probably heard the story of the three wise men placing gifts before the baby Jesus, throwing their own little royal baby shower. Christmas carols tell of it and many a Christmas pageant has featured children with crowns askew, tottering in with their royal gifts.

Yet far from soft blue blankets and a selection of baby toys, these three kings brought seemingly odd gifts for the tiny Savior. They placed at His feet gold, frankincense and myrrh. The Bible doesn't tell us what Mary and Joseph did with Jesus' gifts, but I have to wonder. Unless she understood what they meant, I can almost picture Mary saying, "Wow, umm, thanks. I know just where I'll put these!"

I recently learned that each of these gifts has a symbolic meaning. When we study these meanings, the wise men's gifts take on much greater significance, a significance that is at once sobering and amazing.

Gold has always been a symbol of royalty. This gift signaled the wise men's understanding of who this child was, and how we should receive Him. Because of this child, we are transformed from lowly paupers to royalty seated with Christ (Ephesians 2:6). He had to leave the perfection and grandeur of heaven in order to walk among us, trading His royalty for a time, but never losing His deity.

Incense was a symbol of His purity. Because He was born sinless and lived a perfect life, Jesus was that perfect lamb, without blemish, offered up for our sins. Incense was used as a fragrant offering to God. But the beauty of the scent couldn't be released without being touched by fire. Jesus' life became a fragrant offering through the flames of affliction. And in His death, we receive His purity.

Myrrh symbolized death, as it was used for embalming in those times. Nothing says "congratulations on the birth of your baby" like a little symbolic death! As these men laid this odd collection of gifts at the feet of this child, a little shiver had to have run down His mother's spine when that last one was placed before Him. Already Lord? She had to be thinking. Do I have to start letting Him go already? But I suspect Mary knew that to accomplish His purposes on earth, Jesus' life had to end. And now as we seek to follow Him, our lives have to end as He asks us to die to self and to take up our cross and follow Him.

Have you ever asked yourself why the wise men chose those gifts? While we will never know for sure this side of heaven, I think it's because they listened to God. He directed them to bring these gifts as an outward statement of Jesus' ultimate purpose. Each one points to suffering and death that ultimately leads to transformation. Jesus didn't come to earth to be born, He came to earth to die so we could be reborn.

This Christmas I pray we keep our hearts focused on the meaning in the wise men's gifts -- and give our lives to Him, just as He gave His life to us.

Meet Bear!


He's only a year old and belongs to my daughter, who goes to the University of Alabama, she did not name him Bear, he came already named that. (coincidence? I think not, it was meant to be) She found him on Craig's list, his next move was to the pound and she couldn't stand that, so he went to live with her in Tuscaloosa, where every dog is named "Bear". (wonder why?)

Since it's Christmas break, Bear now calls my house "home", he's 85 pounds of lap dog. He thinks he's meant to be in your lap, you can't persuade him otherwise. The fact that just the front end of him fits, is just enough to make him happy. It's like having a 85 lb, 1 year old in the house. I have two older dogs, Bandit, a 15 year old Shitzu, who hates Bear's guts, and snaps at him anytime he's within 5 feet of him, the other one, Buddy, a 12 year old peek a poo, wants to be Bears' friend, but can't quite do it because Bear wants to wrestle all the time with him. Buddy and Bear wrestling is like Hulk Hogan vs Tiny Tim, not a fair fight. Buddy quickly becomes intimidated, and ends up in a growling snapping fit. We are constantly sending them back to their corners.

Oh and I forgot to mention, Ally (the cat). I think you can figure that out for yourself. Not a pretty picture, is it?

Our house is now clearly a three ring circus, cat kept in living room, Bear kept in den, Buddy and Bandit locked out of den.

I'm beginning to miss the peace and quiet of the empty nest syndrome.

Oh, and my husband is not an animal lover, so he's stays in his man cave in the basement.

But Bear clearly LOVES us, and we love him. Boy did he get lucky when Lindsay found him!

I always knew I was a White Trash kind of girl!

Hey, get your mind out of the gutter.

I'm talking about the "gourmet" christmas snackie (is that a word) mix that you have to keep on hand at Christmas!

The cast:

2 cups of corn chex cereal
2 cups of rice chex cereal
2 cups of cheerios
2 cups of mini pretzels
2 cups of salted peanuts
1 bag of dried cranberries
1 large bag of m & ms
(and anything else you'd like to include)
1 package of white candy bark

Mix all dry ingredients together in large (I mean big, folks), this has to have room to spread out and get coated with chocolate.

Put candy bark in bowl and melt in microwave until creamy. Pour over cereal mixture to coat well. Gently press into a cake sheet pan until chocolate hardens. Then break up and store into an air tight container.

This is really good stuff! Impress your family!

Time for a Cookie Swap!!!


PEANUT BUTTER MICE
Yield: 4 dozen.
1 Cup creamy peanut butter
1/2 Cup butter, softened
1/2 Cup sugar
1/2 Cup packed brown sugar
1 Egg
1 Teaspoon vanilla extract
1 1/2 Cups all-purpose flour
1/2 Teaspoon baking soda
1/2 Cup peanut halves
2 Tablespoons green and red miniature M&M’s
4 Teaspoon miniature semi-sweet chocolate chips
48 Pieces red shoestring licorice cut 2 inches long.•
In a large mixing bowl, cream peanut butter, butter, sugar and brown sugar. Beat in egg and vanilla. Combine the flour and baking soda; gradually add to the creamed mixture. Refrigerate for 1 hour or until easy to handle.• Roll into 1 inch balls. Place 2 inches apart on ungreased baking sheets. Pinch each ball at one end to taper. Insert 2 peanut halves in center of each ball for the ears. Add one M&M for the nose and 2 chocolate chips for the eyes.• Bake at 350 for 10 minutes or until set. Gently insert one licorice piece into each warm cookie for the tail. Let cool in pan for 4 minutes, then remove to wire racks to cool completely.
OR make it easy on yourself and buy the redi-made peanut butter cookies to use instead of making cookies from scratch, save yourself some time!!!!

WHITE CHOCOLATE SNACK MIX

This is the best snack mix I've ever had. You can adjust the colors of the M & Ms to suite your season!

Here's the recipe:


Melt one package of white almond bark,.

Mix two cups each: Wheat Chex, Corn Chex, cheerios,mini pretzels, M&Ms. (You can substitute other Chex or add peanuts, raisins, dried cranberries or other ingredients if you like.)

Pour melted bark over the mixture.

Spread on a cookie sheet lined with wax paper.

Allow to cool, break into chunks.

Store in airtight container for weeks!

Sooooooo goooood!

On to Christmas!

Well, Thanksgiving was good, quieter than normal, but we had a lovely dinner with my MIL and BIL. I cooked way too much food, didn't quite scale down enough for a small group. Put away the Thanksgiving stuff, and

NOW ON TO CHRISTMAS! The gathering at my house on Christmas will be considerably larger, say around 20 to 25 people. I was asked to host my neighborhoods ornament swap on December 6th, but I finally managed to say NO, which is not a word I use too often. I am actually proud of myself for adding that word to my vocabulary.

This year's color scheme at my house is going to be a little different, lime green and purple! My daughters choice. The outside wreaths and mailbox are now sporting lovely lime green bows, the lighted reindeer will also be sporting these bright colors. Our inside tree has a beautiful sparkly purple bow and streamers to go with the very brightly colored lights on our tree and so does the fireplace. The packages under the tree are also wrapped in the various shades of the new green, and purple. It actually looks very festive.

Still have lots of work to do on the decorating, hopefully, we get some photos posted here. I still haven't learned to upload photos from my digital camera, need DDs help.

Wet or Dry Brine? Oh me, oh my.

Today starts the kitchen countdown to Thanksgiving. I made the cornbread for my dressing last night, Thursday morning it will be mixed with chicken stock and other things to make the delicous cornbread dressing to go with the Turkey.

Speaking of the Turkey. I had made up my mind that this year I was going to brine my turkey in a wet brine mixture for 24 hours starting tomorrow morning. However, I saw this on http://www.notmartha.org/ and am now torn between a wet or dry brine.

Turkey Technique: The Dry Brine

In the Los Angeles Times, Russ Parsons shares a turkey cooking technique inspired by Judy Rodgers, the chef/owner of San Francisco's Zuni Cafe.

He calls it "dry-brining": "You just salt the turkey a few days in advance, give it a brisk massage every so often to redistribute the salt, and then roast it." The salt releases moisture from the turkey, which gets reabsorbed by the meat, essentially brining the bird in its own juices.
While wet-brining -- soaking the turkey in a saltwater solution -- has become a very popular way of preparing turkey, Parsons notes the technique often leads to a spongy texture. On the other hand, dry-brining leaves the turkey "firm and meaty."

While the technique is straightforward, make sure you leave enough time for the turkey to brine (three days), though Parsons writes that you can cut it back to two days.

Just salting down the bird and giving him a little message every so often sounds so much easier than mixing, cooking, cooling, pouring into a bag, putting the bag in a cooler with ice.

Heck what am I saying, time is of the essence here, so my bird is going to have to settle for a massage instead of a leisurely soak in the tub!

But was quickly reminded by my daughter when running the Thanksgiving menu by her.

Mom, you forgot the Deviled Eggs. We can't have Thanksgiving without them!!!!!

She's right, I forgot, and they are the standard Thanksgiving and Christmas item in our family.

Ok, they're on the list now, but they will be changed, in keeping with my theme of Thanksgiving Re-Deux.

Here's my new recipe for Deviled Eggs.


12 hard boiled eggs, peeled

1 oz container soft spreadable cream cheese ( I previously used mayo)

2 tablespoons sweet relish

2 teaspoons mustard

salt and pepper

Peel eggs and slice lengthwise. place yolks in mixing bowl and set whites aside.

Mash yolks with cream cheese, then add the relish and mustard,

Taste, add salt and pepper, taste again, add more salt.

Fill white with egg mixture. Sprinkle with Paprika.

Sounds gooood!!!!!! Wish I had about 4 of these puppies right now!

Words I'm trying to live by right now. As you know my Mother passed away in July 2007.

We've (my brothers and I) had her house on the market since January 2008, we did actually have a contract on it, but when the real estate market started it's slide, that contract fell apart due to the financing changing.

We have it priced well below market value, and have not had much luck on it, due to the current economic situation. It is a great house in a great neighborhood and one of the best school systems (Vestavia Hills) in Birmingham, move in condition, new granite in the kitchen, new roof, etc, etc.

However, my prayers may be answered. We have two couples who are seriously looking at it.
Please say a prayer with me that God will shower his mercy on us and we'll sell the house. I have been patient and prayerful for a long time now and it would be a real blessing for my brothers and I, if someone would make this wonderful house their new family home.

It doesn't help that is one block from my house and I have to pass it several times a day, and seeing it sitting empty and dark saddens my heart. I know I would be happier and in a better place emotionally, seeing it occupied by a new family.

Pink Fluff!!!

Ok, continuing my theme of the not so ordinary Thanksgiving, I am retiring the green congealed salad, and replacing it with PINK FLUFF!!!

Yep, this stuff is guaranteed to spice up that Thanksgiving buffet. It's glorious pink color provides just that spark of color you need, plus it is absolutely delicious.

PINK FLUFF!!!

1 12 oz carton Cool Whip, thawed

2 cups miniature marshmallows

1 cup chopped pecans

1 16 oz can crushed pineapple, drained

1 12 oz can cherry pie filling

1 12 oz can condensed milk

8 ozs cream cheese softened.

Stir all ingredients together and refrigerate.

Put it in a pretty clear bowl and add a little pep to your menu! Good enough to be enjoyed as dessert too!

LOOK HOW CUTE!!!

Here's how to do it;
Hershey Kisses ~ Mini Nilla Wafers ~ Frosting ~

Put a small amount of frosting on the bottom of the Nilla Wafer, place the bottom of the Hershey Kiss to the frosting and add a dab of frosting to the top.
Wouldn't they be precious scattered around a Holiday cookie or cheese tray!

Christmas Food Gifts!







Giving food as a gift is a Southern tradition and I love to give it to neighbors, co-workers, just about anybody.
This year I've been looking for something different and think I've found it, courtesy of The Birmingham News. This is pretty cost friendly too.
Chcolate Gravy!!! Doesn't that sound yummy? Imagine it over hot from the oven, homemade biscuits, or topping a brownie sundae, or a slice of pound cake, or even just over vanilla ice cream.
You make the mix, then the receiver add the milk and butter when they're ready to indulge.
Package it up in a pretty gift bag or box, or put in a baggie and wrap with colorful fabric, or put it in a pretty glass container tied up with a fabulous ribbon.

Attach the instructions on a recipe card and your friend will be thanking you!

Thanksgiving Re-Deux!

Thanksgiving in the South has very consistent elements. Turkey and cornbread dressing, cranberry sauce, green beans, sweet potato casserole, congealed salad, and desserts. We generally don't change this too much.

But since my Thanksgiving this year is going to a very small event, just me, my husband, daughter, mother-in-law, and brother-in-law, I'm thinking that the usual fare needs to be tweaked, changed, or maybe improved on, just to liven it up.

First up, the green beans. Had these recently and they are fabulous!!!! Don't get me wrong, I like green beans, but I have never been inspired to eat the whole bowl. But these are not your every day green beans. Make these and your kids will be fighting over them.

Wouldn't that be something! Keep the video camera handy.

FORGOTTEN GREAN BEANS

3 cans of whole green beans,drained
1/2 cup of brown sugar
Garlic salt and pepper to taste
5 or 6 slices of bacon
Put drained green beans in a greased 13x9 in pan. Add brown sugar and stir. Sprinkle with garlic salt and pepper. Top with bacon slices.

Cook at 350 covered for 30 min. and uncovered for 30 min.

YUM, YUM, YUM!!!!!

Now, how to re-invent the turkey, dressing, cranberry sauce, sweet potato casserole, congealed salad, (already got this one, up next) and desserts, without straying from the required elements of the traditional Southern Thanksgiving menu.

FORGET CHRISTMAS VILLAGE!


I have it from excellent sources, (My Bunco Group) that this is the place to do your Christmas Shopping in Birmingham. Christmas Village was fun, but things were a little too country and primitive for my taste, ( I didn't buy a thing except food mixes, not a good thing). According to the shopping experts, (again, My Bunco Group), this is the place to knock out a Christmas list. Actually they wanted us to all go together on Thursday, the first day, but unfortunately some of us have jobs. Someday, I will know how how it feels to be one of the lucky ones that doesn't have to get up and go to work EVERYDAY OF MY FREAKIN' LIFE.
(sorry, I just lose control every now and then)
I'll just have to wait until Saturday to make my appearance.
Hope they leave me something to buy!

An Eye-Opener On Ovarian Cancer

THIS IS A MUST TO READ TO THE END

Years ago, Gilda Radner died of ovarian cancer. Her symptoms were inconclusive, and she was treated for everything under the sun until it was too late. This blood test finally identified her illness but alas, too late. She wrote a book to heighten awareness. Gene Wilder is her widower.

I have Primary Peritoneal Cancer. This cancer has only recently been identified as its OWN type of cancer, but it is essentially Ovarian Cancer. Both types of cancer are diagnosed in the same way, with the 'tumor marker' CA-125 BLOOD TEST, and they are treated in the same way - surgery to remove the primary tumor and then chemotherapy with Taxol and Carboplatin. Having gone through this ordeal, I want to save others from the same fate. That is why I am sending this message to you and hope you will print it and give it or send it via E-mail to everybody you know. One thing I have learned is that each of us must take TOTAL responsibility for our own health care. I thought I had done that because I always had an annual physical and PAP smear, did a monthly Self-Breast Exam. When I had a total hysterectomy in 1993, I thought that I did not have to worry about getting any of the female reproductive organ cancers. LITTLE DID I KNOW. I don't have ovaries (and they were HEALTHY when they were removed), but I have what is essentially ovarian cancer. Strange, isn't it? These are just SOME of the things our Doctors never tell us: ONE out of ever 55 women will get OVARIAN or PRIMARY PERITONEAL CANCER. The 'CLASSIC' symptoms are an ABDOMEN that rather SUDDENLY ENLARGES andCONSTIPATION and/or DIARRHEA .I had these classic symptoms and went to the doctor. Because these symptoms seemed to be 'abdominal', I went to a gastroenterologist. He ran tests that were designed to determine whether there was a bacteria infection; these tests were negative, and I was diagnosed with 'Irritable Bowel Syndrome'. I guess I would have accepted this diagnosis had it not been for my enlarged abdomen. I swear to you, it looked like I was 4-5 months pregnant! I therefore insisted on more tests and they reluctantly) scheduled me for a CT-Scan (just to shut me up, I think). This is what I ! mean by 'taking charge" of our own health care.' The CT-Scan showed a lot of fluid in my abdomen (NOT normal). Needless to say, I had to cancel my trip and have FIVE POUNDS of fluid drawn off at the hospital (not a pleasant experience I assure you), but NOTHING compared to what was ahead of me. Tests revealed cancer cells in the fluid. Finally, finally, finally, the doctor ran a CA-125 blood test, and I was properly diagnosed. I HAD THE CLASSIC SYMPTOMS FOR OVARIAN CANCER, AND YET THIS SIMPLE CA-125 BLOOD TEST HAD NEVER BEEN RUN ON ME, not as part of my annual physical exam and not when I was symptomatic. This is an inexpensive and simple bloodtest! PLEASE, PLEASE TELL ALL YOUR FEMALE FRIENDS AND RELATIVES TO INSIST ON A CA-125 BLOOD TEST EVERY YEAR AS PART OF THEIR ANNUAL PHYSICAL EXAMS. Be fore warned that their doctors might try to talk them out of it, saying, 'IT ISN'T NECESSARY.' Believe me, had I known then what I know now, we would have caught my cancer much earlier (before it was a stage 3 cancer). Insist on the CA-125 BLOOD TEST; DO NOT take 'NO' for an answer! The normal range for a CA-125 BLOOD TEST is between zero and 35. MINE WAS 754. (That's right, 754!). If the number is slightly above 35, you can have another done in three or six months and keep a close eye on it, just as women do when they have fibroid tumors or when men have a slightly elevated PSA test (Prostatic Specific Antigens) that helps diagnose prostate cancer. Having the CA-125 test done annually can alert you early, and that's the goal in diagnosing any type of cancer - catching it early.

Do you know 55 women? If so, at least one of them will have this VERY AGGRESSIVE cancer. Please, go to your doctor and insist on a CA-125 test and have one EVERY YEAR for the rest of your life. And forward this message to every woman you know, and tell all of your female family members and friends. Though the median age for this cancer is 56, (and, guess what, I'm exactly 56,) women as young as 22 have it. Age is no factor.

I found that the CA-125 test is an ovarian screening test equivalent to a man's PSA test prostate screen (which my husband's doctor automatically gives him in his physical each year and insurance pays for it). I called the general practitioner's office about having the test done. The nurse had never heard of it. She told me that she doubted that insurance would pay for it. So I called Prudential Insurance Co, and got the same response. Never heard of it - it won't be covered. I explained that it was the same as the PSA test they had paid for my husband for years. After conferring with whomever they confer with, she told me that the CA-125 would be covered. It is $75 in a GP's office and $125 at the GYN's. This is a screening test that should be required just like a PAP smear (a PAP smear cannot detect problems with your ovaries). And you must insist that your insurance company pay for it.

Gene Wilder and Pierce Brosnan (his wife had it, too) are lobbying for women's health issues, saying that this test should be required in our physicals, just like the PAP and the mammogram.

PLEASE TAKE A MOMENT TO SEND THIS OUT TO ALL THOSE YOU CAN. BE IT MALE OR FEMALE, IT SHOULD NOT MATTER, AS THEY CAN FORWARD IT ALSO TO THOSE LOVED ONES THEY KNOW.


ps. Since my Mom died of Ovarian cancer and I have a fibroid cyst, my gyn automatically does an internal sonar scan and the CA 125 and my insurance always pays for it.
I tell everyone I know to get this test done, they can use the same blood they draw for all the other yearly tests. BUT YOU HAVE TO ASK FOR IT UNLESS THEY HAVE SOME REASON TO DO IT.

What is your favorite Holiday food memory?

Mine is my mothers Fresh Apple Cake. She made it for me at Thanksgiving every year.

This will be my 2nd Thanksgiving without my Mom, she died in July 2007 of Ovarian Cancer. Last year I didn't have the strength or desire to even pretend there was a Thanksgiving or Christmas. I just wanted them to be over with, it was hard to face them without her.

This year however, I'm going to do better for my family's sake. I have my Mom's recipe book and will be attempting to make this cake because it's a tradition we shared, just she and I. It's full of recipe clippings from years back, but this is the ONE recipe that means the most to me.

I would sit at her kitchen table and peel the apples because it hurt her hands to do it, and we would talk as she made the cake magic happen. Maybe my daughter will help me do it this year and we can start this tradition with the next generation.

I know as I smell it cooking, my thoughts will be of my Mother, and how much I loved all the Holidays she made so special.

Girls Night Out!



If you girls don't have a neighborhood Bunco game that you're involved in, you're missing out on a lot of fun! I've been playing with 12 of my neighborhood friends, once a month, for about 4 years now. We each do it once a year at our house, we serve dinner and a great dessert and laugh our heads off. No dieting allowed on Bunco night!

It's a great way to get to know the ladies in your area, share great fellowship and lots of laughter!!!

Mandatory Thanksgiving Fare!



I am the designated Sweet Potato Casserole guru of our family. It is my job to supply this delicacy to our Thanksgiving feast. I've shared the recipe with my sister in laws but they all say they can't make it like mine. (yeah right) The secret to this recipe is to use fresh potatoes, you cannot used canned ones, well you can, but it won't taste the same. And do not go anywhere near this recipe with a marshmallow.


The big secret?
Boil the potatoes in their peeling, do not peel and cook, do not bake.

Here's the recipe!


6 to 7 large sweet potatoes
3 eggs
1 cup of sugar (or more depending on how sweet you like it) taste, then taste again, maybe one more taste, then adjuster sugar to your liking
1 tablespoon vanilla
1 stick of butter.

Boil sweet potatoes (in peeling) until soft. Let cool just until you can hold them. Peel and put in large mixer bowl. Beat potatoes with mixer until well mashed.
add butter, sugar, vanilla, beat well, (this will cool down potatoes before you add the eggs)
then add eggs and beat it it, just beat it. (sorry)

Pour into greased 13 x 9 pan.

Topping:
1 box dark brown sugar
1 1/2 cup chopped pecans.
1/2 cup melted butter.
Mix and spread over top of potatoes.

Bake at 350 until middle is puffed and topping is gooey. About 45 minutes.

Let cool, it will be hard to do but a necessity if you value the roof of your mouth, serve and fight over the leftovers!


Yep it's that easy and so worth it!

Super Easy Halloween Craft

This is the kind of project I like, cheap and easy, but still cute. From Better Home & Gardens.com

Tin Can Luminarias
Light up the night Halloween-style with orange and black luminarias. Even young trick-or-treaters can make these cheerful lights with some adult help.

Materials
Tracing paper
Permanent marker
Clean empty tin cans
Hammer and large nail
Spray paint: orange and black
Wire
Tea-light candles

Instructions
Using tracing paper, trace the pumpkin face or bat patterns (download below), or make your own design. Transfer the pattern of your choice to a clean tin can; go over the transferred pattern with a permanent marker. Fill the tin can with water; place it in the freezer. When the water in the can is frozen, remove the can from the freezer.
Use a hammer and nail to puncture the design in the can. Punch two holes in the rim of the can on opposite sides, centering the design between the two holes. Let the ice melt; allow the can to dry completely.
Cut a 16-inch length of wire. Insert one end of the wire into a hole in the rim; twist the end of the wire around the wire length. Insert the other wire end through the other hole in the rim, securing the wire in the same manner.
Spray paint the pumpkin can orange and the bat can black. Let the paint dry. Place a tea-light candle inside the can and hang securely from a branch or garden hook.

Bright Star Lemon Pie

There is a restaurant in Bessemer, Al. called the Bright Star. It's been around all of my life (a lot of years), that people travel from all corners of Alabama to eat at. One of the main attractions are their desserts! The lemon pie is one of the favorites and at long last, they've shared the recipe with us!

The Bright Star's Lemon Icebox Pie

4 14-ounce cans sweetened condensed milk, chilled
4 egg yolks, slightly beaten
1 cup freshly squeezed lemon juice, chilled
2 9-inch graham-cracker pie crusts (homemade or store-bought)
1 can whipped cream (for topping)

In a bowl, mix together sweetened condensed milk and egg yolks. In a steady stream while whisking, add lemon juice to mixture until well blended.(Note: mixture will thicken.) Pour mixture into pie crusts. Refrigerate at least one hour. Before serving, top pie with whipped cream. (Makes two 9-inch pies)

I made them this weekend for the hubby, who couldn't wait. They are fabulous. You must give this one a try!

Best Brownies in the world!

Here's an easy recipe for special brownies that will have people begging you for the recipe.


Two boxes of Betty Crocker (family size) brownie mix
(prepare per instructions on box)
3 large (family) size chocolate candy bars (hersheys, Mr. Goodbar, Butterfinger, Heath, Dove, etc)

Line 9 x 13 pan with aluminum foil (do this, you'll be glad you did)

Pour1/2 of batter (1 box) into bottom of pan and spread out.

Then line the pan with 3 large chocolate bars of your choice. I'm talking the big ones, like 5 x 3 inches, you can find them in the candy isle. I prefer butterfinger.

Then pour remaining batter (2nd box) on top of the butter finger candy bars.

Bake at 350 until middle is done, it will take slightly longer than box directions. Keep checking middle for doneness.

Allow them to cool, completely, then remove them from pan with aluminum foil and slice into squares. I like to use a pizza cutter.

These are a cross between a brownie and fudge. Fabulous!!!!!

The Sun is Out!

After 3 days of almost non-stop rain, this morning the sun is shining brightly. It is so good to see it again, but I'm afraid, we've got another round of tropical rainfall coming our way, thanks to Gustave.

Where do they get these names anyway? What's wrong with Gus, Greg, George, or for that matter Melinda?

So until we meet Gustave, let's enjoy the sunshine!

Puppy Love!!!

One of the loves of my life is my Shitzu, Bandit. He was a Christmas gift for my daughter 14 years ago, but he quickly became my constant companion, much to my daughters disappointment. But due to his age, he's now deaf as a stump. And it's hard to communicate with a spoiled rotten dog when he can't hear you. I am a firm believer that dogs understand what you say to them, mine always do. I have lovely conversations with them.

I now point to the door and mouth "out?", when I think he needs to do his business. I take a can of dog food out of the pantry and show it to him, when I think he wants to eat, if he wags his tail it means yes!

But lately, he's taken to barking until I pay attention to him. Not just one small bark, but continous loud (remember he can't hear) barking until I figure out what he needs. I go thru everything I can think of until I figure it out. It's like having a 1 year old again that can't talk and trying to figure out what they want.

But I love him and am willing to do anything it takes to make him happy. The thought of losing him breaks my heart. So I will be his trained monkey for as long as he needs me to be.

Come to think about it, trained monkey is what I do best! I'm everybody's trained monkey, my daughters, my husbands my boss's, my neices and nephews, but I wouldn't have it any other way.

One of these days I've going to have myself a trained monkey!

Yeah right!
